This meatloaf is packed with onion, carrot, and bell pepper and topped with a spicy tomato sauce. It's a healthier alternative to regular meatloaf yet still tastes delicious.
1 1/2 pound lean ground beef or turkey
3/4 cup quick or old fashioned oats, uncooked
3/4 cup finely chopped onion
1/2 cup shredded carrot
2/3 cup finely chopped red or green bell pepper or combination
3 tablespoons finely chopped parsley
1/2 cup ketchup
1 large egg, lightly beaten
1 tablespoon worcestershire sauce or soy sauce
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 can (10 ounce size) diced tomatoes with green chiles
Heat oven to 350 degrees F.
Combine meatloaf ingredients; mix lightly but thoroughly. Shape meatloaf mixture into 10 x 6-inch loaf on rack of broiler pan.
Bake 50 to 55 minutes or until meatloaf is to medium doneness (160 degrees F for beef, 170 degrees F for turkey).
Spoon tomatoes into microwave-safe bowl; microwave covered on HIGH until heated through. Slice meatloaf; top with tomatoes.

Excellent flavor! The carrots and ketchup combine to give this meatloaf a slightly sweet taste. Lots of veggies make it seem like a healthier alternative sort of meatloaf.

Loved all the veggies in this recipe. I think they helped keep it so moist and give it extra flavor. I usually like to make a meatloaf sandwich with the leftovers, but there were none with this recipe!
