French salad dressing adds a sweet and tangy flavor to this meatloaf recipe. Hint: leftover meatloaf makes great sandwiches!

1 1/2 pound ground beef
1 small onion, finely chopped
1 cup dry bread crumbs
1 cup shredded cheddar cheese
1/2 cup prepared french salad dressing
2 eggs
1 can (4 ounce size) sliced mushrooms, drained
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup ketchup
Preheat the oven to 375 degrees F.
Combine the beef, onion, bread crumbs, cheese, salad dressing, eggs, mushrooms, salt, and pepper in a large bowl. Mix well but do not overwork the meat.
Transfer the meatloaf mixture to a 9x5-inch loaf pan and smooth the top.
Spread the ketchup evenly over the top of the meatloaf.
Place the pan in the oven and bake at 375 degrees F for 1 to 1 1/4 hours or until the meatloaf is cooked thoroughly through.
Remove the pan from the oven and let sit for 5 minutes. Drain off any excess grease then slice the meatloaf into serving pieces.

Can I prepare this the day before I bake it?
Yes, it should be fine to prepare and refrigerate until you are ready to bake it. I wouldn't make it more than 24 hours in advance though just for food safety reasons.
