Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

This meatloaf is exactly as titled...easy and pleasing. I have made this often and always had raves. Most say it is the best meatloaf they have ever eaten. I am a man who cooks when necessary or for fun, and it's nice to be complimented as a gourmet and asked for the recipe.
