Broccoli And Cheese Meat Loaf

2 eggs
1 1/2 pound ground beef
1/2 cup Italian-style bread crumbs
1 teaspoon instant minced onion
1/2 cup ketchup
1 cup frozen chopped broccoli, thawed
6 slices American cheese
directions
Heat oven to 350 degrees F.
Beat eggs in medium bowl. Add ground beef, bread crumbs, onion and ketchup; mix well.
Press half of mixture in ungreased loaf pan. With rubber scraper, make slight indentation down center of beef mixture.
Top with broccoli and 3 of the cheese slices. Top with remaining beef mixture, covering cheese and broccoli. Smooth top of loaf.
Bake at 350 degrees F for 1 to 1 1/4 hours until cooked through. Top with remaining cheese slices; cover and let stand until cheese is melted.
