Basic Slow Cooker Meatloaf

Nothing bad about basic. The low heat of the slowcooker is the key to keeping this ultra-simple meatloaf ultra-moist. Ketchup is the classic topping, but it's easy to add in a couple dashes of hot sauce for a spicier meatloaf.

ingredients

2 eggs
2 slices bread, cut in small cubes
milk
2 pounds ground beef
1 small onion, chopped
salt and pepper
ketchup or salsa

directions

Add the eggs to a large bowl. Beat well. Stir in the bread cubes. Add just enough milk to moisten the mixture.

Add the ground beef and chopped onion to the bowl and stir to combine the ingredients. Do not overwork the mixture. Season as desired with salt and pepper.

Place the meat in the crock pot and form into a loaf or flatten. Pour the ketchup or salsa over the top to cover the surface of the meat.

Cover the crock pot and cook on low for 6-8 hours or until the meatloaf is cooked through. Serve the meatloaf with the sauce from the crock pot.

    I am really picky about meatloaf. It has to be just the right consistency, not too tangy in flavor, and I don't like it "grainy" with too much breadcrumbs. This was everything I love in a meatloaf. Simple but good. The only thing I added was a pinch of garlic powder. I did cook it on low for 6 hours, not 8-12, but I've learned that so many recipes vary depending on the kind of slow cooker you have so I just adjust accordingly for how mine cooks.

    simple, not dried out, and came out really good!! thought it would lack flavor but it was surprisingly more flavorful with these ingredients than the one we normally make in oven that has loads of spices/herbs in it!! this is my new way of making meatloaf now.. thanks for sharing it!! i rated it a 4, more like 4 1/2, because the plain ketchup on top turned out paste-y and thick, was kinda yuck.. think 1 1/2 cup ketchup/2tbsp brown sugar/1tbsp vinegar mixture will make this recipe a five though :)
