ingredients
1 pound lean ground beef
1 pound pork chorizo (chorizo de puerco)
1 bag (8 ounce size) cubed Colby & Monterey Jack Cheeses
1 can (3.8 ounce size) sliced ripe olives, drained
1 can (4 ounce) mushrooms pieces & stems, drained
2 eggs
1 cup quick-cooking oats
additional spices to taste such as garlic powder with parsley, cayenne pepper, minced onion, ground sage, (any other spices you prefer)
directions
Preheat oven to 350 degrees F.
Gently mix everything together in a bowl. Press the mixture into a 8x4x4 loaf pan. Smooth the top of the mixture.
Put any spices you would like on top of the loaf.
Place in oven and bake for 1 1/2 - 2 hours.
cook's notes
Simple enough to make with nothing more than the loaf pan. Very hard to ruin. I have also tried this with Italian sausage. I just prefer the Chorizo.
The spices are ones that have found there way into this bachelor's cupboard. Use whichever spices you feel the need to. With the Chorizo you don't really need to add any other spices, but it makes me feel more like I'm actually cooking.
