Nothing says classic comfort like a good, old-fashioned helping of meat loaf. It is easy to make and simply delicious. Choose a good ground sirloin and marry up some oatmeal, onion soup, ketchup and horseradish. Top with a homemade glaze of tangy ketchup and brown sugar. Guaranteed to come out juicy every time.
Meatloaf
2 pounds ground sirloin
2 eggs, beaten
1 cup dry oatmeal
1 package onion soup mix
1 tablespoon horseradish
2 teaspoons salt
1/4 teaspoon black pepper
1/2 cup ketchup
1/4 cup milk
Glaze
1/2 cup ketchup
1 tablespoon horseradish
3 tablespoons brown sugar
2 teaspoons spicy prepared mustard
Preheat oven to 350 degrees F. Grease a loaf pan.
Combine the sirloin, eggs, oatmeal, onion soup mix, horseradish, salt, pepper, ketchup, and milk in a large bowl. Mix enough to combine the ingredients but do not overmix.
Place the meatloaf in the prepared loaf pan.
Combine the glaze ingredients and mix until the brown sugar is dissolved. Spread the glaze over the top of the meatloaf.
Place the pan in the oven and bake at 350 degrees for 1 1/4 hour or until the meatloaf is cooked in the middle.
Remove from the oven and let stand for 5 minutes before slicing.

We all (kids also) enjoyed this recipe although we might substitute 1/2 cup of breadcrumbs for the oatmeal next time.

THIS IS A GREAT SIMPLE RECIPE. THE KIDS CAN HELP MAKE THIS ONE. ONE DISH MIXING. THE ONLY PROBLEM I HAD WAS REMOVING IT FROM THE LOAF PAN, BUT SOMEONE ELSE SUGGESTED TAKING IT OUT EARLY AND FLIP IT TO A SHEET TO FINISH COOKING. THE SAUCE ON TOP IS MUCH BETTER THAN THE OLD STAND-BY. I WILL PUT A LITTLE MORE HORSERADISH IN NEXT TIME SO THERE WON'T BE ANY "LOAFING" MORE YIPPIE YO!!

What a fantastic recipe. The only problem I had was that it doesn't cook right through in the tin, so I turn it out onto a baking tray after 40 mins & spread the rest of the marinade over the sides & bottom (now the top!).

This is one of the best meatloaf recipes I've ever tried. Most of them are just bland or the glaze is ho-hum. It was a tad salty, but I think the onion soup mix contributed to that so I will leave out salt next time.

An easy recipe - the horseradish adds a nice kick to the meatloaf. Feel free to adjust it to taste. If ketchup is too tangy for your tastes, go ahead and use plain tomato sauce for all or part of the ketchup.
