Puerto Rican Fried Rice

Many cultures have their own take on the traditional fried rice. This recipe for Puerto Rican fried rice calls for cilantro, which gives it a unique flavor. The cooking procedure is the same as Asian fried rice.

ingredients

4 tablespoons olive oil
4 tablespoons soy sauce or to taste
1/2 pound chopped ham
1 chopped cooked chicken breast or shrimp, or both
1/4 cup chopped cilantrillo (cilantro)
1/2 cup chopped red bell pepper
1 cup fresh bean sprouts
1/4 cup shredded iceberg lettuce
2 eggs, beaten
2 1/2 cups cooked rice
1/2 teaspoon salt
1/2 teaspoon black pepper

directions

Heat 2 of olive oil in a large skillet. Saute the cilantrillo, red pepper, bean sprouts, and lettuce over medium-high heat for 2 minutes. Add the meat, chicken, shrimp and saute. Add the eggs and cook until scrambled soft. Set aside.

In another pan, heat the remaining oil. Add the rice and the soy sauce and cook over high heat, stirring constantly, until the rice has become golden in color. Add the egg mixture, salt (careful, only if necessary), and pepper, turn the heat to medium, and cook for another 2 minutes. Serve.
