1 package (6 ounce size) white and wild rice mix
1 tablespoon butter
1 small onion, finely diced
1 stalk celery, finely diced
1/4 teaspoon dried Italian seasoning
1 pound ground beef
2 cups shredded mozzarella cheese
1 cup sour cream
1/2 cup frozen corn, thawed
1/2 cup frozen green beans, thawed
Preheat the oven to 350 degrees F.
Cook the rice as directed on the package. Transfer to a bowl and set aside.
Meanwhile, melt the butter in a large skillet over medium-high heat. Add the onion, celery, and Italian seasoning. Cook, stirring frequently, until the onion is soft. Transfer the mixture to the bowl of rice.
Add the ground beef to the skillet. Cook, stirring frequently, until browned. Drain off any excess grease and transfer to the bowl. Combine the remaining ingredients with the rice and transfer to a 1 1/2 quart baking dish.
Place the baking dish in the oven and bake at 350 degrees F, uncovered, for 35-45 minutes or until heated through.
Serve hot.

Very easy and forgiving hot dish. I put diff frozen vegs in sometimes to change it up.
