This easy skillet meal is made with ground beef, tomatoes, peas, cheese, and brown rice.

1 pound ground beef
1 package dry onion soup mix
3/4 cup brown rice, uncooked
1 can (16 ounce size) stewed tomatoes, undrained
1 cup frozen petite peas, thawed
2 cups water
1 cup sharp cheddar cheese, shredded
Heat a skillet over medium-high heat. Add the ground beef and cook, stirring to break up the meat, until no longer pink. Drain off any excess grease.
Add the onion soup mix and rice and stir until the ingredients are well mixed.
Add the undrained tomatoes, peas, and water and stir to combine.
Bring to a boil then reduce the heat to a simmer. Let cook, covered, for 25 minutes or until the rice is cooked and the water is absorbed.
Remove the cover and top with the cheese. Let cook, uncovered, until the cheese is melted.
Serve hot.

Followed the suggestions and added beans and onion. Good, simple meal!

We added kidney beans, onions and chopped green pepper. I browned the onions with the ground beef when the beef was nearly done. The recipe calls for water but doesn't specify the amount. We added 3 cups of water. It worked well., The family liked it but wasn't bowled over. Two teen-agers and my wife rated it a 3 average. Easy, healthy, quick recipe.

This was good and had lots of flavor, it seemed to lack a little substance though. Would be good with some add-ins: drained, canned beans (kidney or black); chopped onion; additional veggies.
