Make your mornings a little less hectic with these overnight breakfast recipes. Prep the night before and enjoy a warm, comforting meal in the morning.


2 sirloin strip steaks (12 ounce size), about 1 1/2 inches thick
1 teaspoon salt
fresh-ground black pepper, to taste
3 scallions, thinly sliced
1 1/2 cup grape tomatoes, quartered
3/4 cup crumbled blue cheese
1/4 cup chopped, toasted walnuts
1 tablespoon olive oil
1 tablespoon minced fresh chives, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
whole fresh chives, for garnish
Preheat a gas or charcoal grill or grillpan for high heat. Season steaks with half the salt and the pepper.
Grill 5 minutes until browned on one side. Turn; grill to desired doneness, about 5 minutes for medium. Let steak rest 5 minutes.
Meanwhile, combine scallions, tomatoes, cheese, walnuts, olive oil, minced chives and remaining salt in a medium bowl with a fork until ingredients are evenly coated with olive oil.
Split each steak into 2 servings and top with salsa and whole chives.

The blue cheese "salsa" is outstanding! The only thing it lacked from the original recipe is a dash of pepper. The steaks can be cooked however you normally cook them - we actually pan fried in a cast iron skillet this time because it was too hot to grill. Loved the recipe and was a nice presentation.
