ingredients
Dressing
1 tablespoon white balsamic vinegar
2 teaspoons sherry wine vinegar
1 tablespoon shallot, minced
3 tablespoons extra virgin olive oil
salt
Salad
8 Butterhead lettuce leaves
4 cups mache salad greens
1 medium Granny Smith apple, cut into matchstick sized strips
2 ounces Manchego cheese, cut into strips
1/4 cup salted almonds, coarsely chopped, roasted
directions
For Dressing: Combine both the vinegars and the shallot in a small bowl. Whisk in the oil and season with salt to taste.
For Salad: Line each individual serving plate with two Butterhead lettuce leaves. Drizzle with a small amount of the vinaigrette.
Combine the mache, apple, cheese, and almonds in a large bowl. Add enough of the vinaigrette to coat the salad lightly and toss well.
Divide the salad evenly among the plates, on top of the lettuce.
