ingredients
3 cups diced rhubarb
1/4 cup water
1/2 cup sugar
1 1/2 cup miniature marshmallows
few drops red food coloring
1 cup whipping cream, beaten stiff
2 cups coarsely broken crisp chocolate cookies
directions
Cook diced rhubarb in water until tender. Stir in sugar, marshmallows and food coloring after removing from heat.
Chill and add cream. Then fold in the broken cookies and pour into freezer trays. Freeze until firm.
