Baked Peaches, Italian-Style

ingredients
6 whole peaches, ripe
5 tablespoons lemon juice
1 1/2 cup Amaretto cookie crumbs
2 tablespoons brown sugar
1/3 cup butter, softened
3/4 cup Amaretto liqueur
directions
Several hours in advance, peel, seed and halve the peaches and dip in lemon juice. Place in a shallow casserole.
Combine cookies, sugar and butter and blend well. Fill hollow of each peach half with about 1 tablespoon of the filling and sprinkle a little liqueur over each.
Bake uncovered for 30 minutes at 375 degrees F or until peaches are softened and golden. Serve with peach or vanilla ice cream.
