It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

When you're in the peak of peach season you'd better take advantage. This compote is fantastic for summery desserts and even an add-in for salsas to give them a sweet and fruity peach twist.

1 cup sugar
1/2 cup water
1 slice (1/2-inch size) lemon zest (yellow part only)
4 cups peeled, pitted peaches, diced or sliced
Combine the sugar, water, and lemon zest in a heavy saucepan over high heat. Bring to a boil then reduce the heat to a simmer. Let the mixture cook at a simmer for 5 minutes.
Add the peaches to the liquid and cook for 5 minutes or until tender. Remove the peaches from the liquid with a slotted spoon and place in a bowl. Remove the lemon zest from the liquid.
Cook the liquid over medium-high heat for 5 minutes until it thickens and becomes syrupy. Pour the syrup over the peaches.
Serve the peach compote warm.
