Crunchy Peach Cobbler

ingredients
1 double crust pie pastry
5 cups sliced peaches
1 cup sugar
1/4 cup water
3 tablespoons flour
1/4 cup sugar
1/8 teaspoon salt
butter

Roll half the pastry very thin and line a 2" deep baking dish. Roll and cut the other half into strips.
Spread half of the strips on a cookie sheet. Bake the strips at 375 degrees F until brown, about 10 minutes. Set aside.
Put peach slices, 1 cup sugar, and water in a saucepan; cook until fruit is soft.
Mix flour, sugar and salt; add to fruit. Cook, stirring, until slightly thick. Stir in cooked pastry strips. Spoon into the crust-lined dish; dot with butter and cover with uncooked strips.
Bake at 400 degrees F until brown, about 30 minutes.

I'm not much of a baker. Baking kinda intimidates me. But it's that time of year to use up apples and this was not hard to do. Turned out great! Thanks for the recipe.
