Baked Maple-Coffee Glazed Ham

ingredients
3/4 cup maple pancake syrup
1 tablespoon Dijon mustard
1 tablespoon chili sauce or ketchup
1 tablespoon cider vinegar
2 teaspoons Worcestershire sauce
2 teaspoons instant coffee powder
8 pounds shank-end portion, fully cooked ham
directions
Mix all glaze ingredients in a 2-quart saucepan. Bring to a boil, reduce heat and simmer 3 minutes. Let cool.
Heat oven to 325 degrees F. Line a shallow roasting pan with foil. Put a rack in pan.
If necessary, cut off additional rind from ham so 5 to 6 inches of fat are exposed. With a sharp knife, score fat in a diamond pattern.
Cover ham loosely with foil. Bake 1 hour and 15 minutes. Brush ham with glaze. Bake uncovered 40 to 60 minutes longer, brushing twice more with glaze, until meat thermometer inserted in thickest part (not touching bone) registers 140 degrees F. Let ham rest 15 minutes before slicing.
