The battle of the BBQ between states is a big deal, and sauce is one of the most defining differences in styles. This South Carolina sauce works best with pork but can also be used on chicken.
1 tablespoon vegetable oil
1/2 medium onion, very finely chopped
2 medium garlic cloves, crushed
1/2 cup cider vinegar
1/2 cup Worcestershire sauce
1 tablespoon dry mustard
1 tablespoon dark brown sugar
1 tablespoon paprika
1 teaspoon salt
1 teaspoon cayenne pepper
1 cup ketchup
Heat the oil in a saucepan over medium heat. Add the onion and garlic and cook, stirring frequently, for 4-5 minutes or until the onion is soft.
Add the vinegar, Worcestershire sauce, dry mustard, brown sugar, paprika, salt, and cayenne. Mix well then bring the sauce to a boil. Reduce the heat to a simmer then stir in the ketchup. Cook, stirring occasionally, for 15 minutes or until the barbecue sauce has thickened.
Remove the pan from the heat and let the sauce cool a bit. Use immediately or let the sauce cool completely and then store it in an airtight container in the refrigerator for up to 10 days.

Very easy sauce to make. Tasty as well, sweet...spicy...and a nice kick of vinegar.
