2 medium onions, chopped 4 ounces Pepperoni or Salami cut in small pieces 1 teaspoon garlic powder 1 teaspoon oregano leaves 2 envelopes chicken noodle soup mix 6 cups water 4 tablespoons tomato paste 1 cup Mozzarella cheese, shredded
In a large saucepan, cook the onion, pepperoni, garlic powder and oregano leaves over medium-high heat, stirring frequently about 3 minutes or until the onion is tender. Stir in the remaining ingredients except for the cheese. Bring to a boil and then simmer, stirring occasionally for 5 minutes. Serve with the cheese sprinkled over the top of the soup.
