Cheeseburger And Potato Soup

ingredients
1/2 pound ground beef
3/4 cup onions, chopped
3/4 cup shredded carrots
1 cup diced celery
1 teaspoon basil
1 teaspoon parsley
4 tablespoons butter
3 cups chicken broth
4 cups diced potatoes
1/4 cup flour
2 cups grated cheddar cheese, I have substituted Velveeta
1 1/2 cup milk
salt and pepper, to taste
1/2 cup sour cream
directions
Brown hamburger. Add butter, onions, carrots, celery, basil, parsley and potatoes, cover and cook until vegetables are semi- tender. Add broth and bring to a boil.
Reduce heat, cover and simmer 10-12 minutes.
Meanwhile mix well, flour and milk, add to broth,. Bring to a boil and stir constantly for 2 minutes or until it thickens. Reduce heat, add cheese, salt, pepper and sour cream.

It was very good I would recommend adding a little more hamburger and possibly cheese if you like a lot of cheese wich I do. I added some cambells cheddar soup to mine

I add two boneless skinless chicken breasts to the broth and cook first before adding the meat/vegetable mixture. I also add 3/4 teaspoon salt and 1/2 teaspoon of pepper. Sometimes I use 3 cups of water and two boullion cubes in place of the broth. Either way, we love it and so do our guests!!!

I increased the beef to 1 pound and increased the sour cream to 1/2 cup. To give it just a little zip, I added 2 tsp. yellow mustard.

I would add a little more burger to this recipe....otherwise it was absolutely delish!!
