It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

under 30 minutes
ingredients
2 large eggs
1/4 cup butter, melted
1 teaspoon vanilla extract
1 cup buttermilk
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
3/4 cup sugar
1/2 cup cocoa powder
1/2 cup chopped walnuts, optional
1/4 cup miniature semisweet chocolate chips, optional
vanilla ice cream
crushed hard peppermint candy (for garnish)
Chocolate-Peppermint Sauce
1 cup semisweet chocolate chips
2/3 cup half-and-half, divided
1/4 cup finely crushed hard peppermint candy
directions
Combine first three ingredients in a mixing bowl. Beat at medium speed with an electric mixer until foamy, about 2 minutes. Add buttermilk, mixing well. Set aside.
Combine flour and next six ingredients, then gradually add to egg mixture, beating at low speed just until blended. Stir in walnuts and chocolate chips, if desired.
Bake in a preheated, oiled waffle iron until done. Serve with vanilla ice cream and Chocolate-Peppermint Sauce. Garnish if desired.
For Chocolate-Peppermint Sauce: Combine chocolate morsels, half the half-and-half and candy in a small saucepan. Cook over low heat, stirring occasionally, for about 10 minutes or until candy melts.
Stir in enough of the remaining half-and-half for desired consistency. Serve over warm waffles.
