Cranberry Waffles

30-60 minutes
ingredients
1 1/2 cup plain yogurt
1 1/2 cup cottage cheese
1 1/2 cup buttermilk
1 tablespoon vanilla
2 cups all-purpose flour
1 tablespoon baking powder
3 egg whites
1/2 cup sugar
1 cup fresh cranberries
Orange Butter Sauce
3 tablespoons butter
1 cup honey
3 tablespoons orange juice
2 tablespoons finely grated orange rind
directions
Chop cranberries very fine, mix with sugar.
Puree yogurt and cottage cheese in blender for 4 minutes. Put in bowl and stir in buttermilk and vanilla. Sift together flour and baking powder. Whip into buttermilk mixture. Stir in sugared cranberries.
Beat egg whites to soft peaks and fold into batter. Cook in preheated waffle iron sprayed with non-stick cooking oil.
For Orange Butter Sauce: Cook butter, honey and orange juice over medium-high heat for 15 minutes. Stir in grated orange rind. Serve warm over waffles or pancakes.
