Slow Cooker Cheeseburger Meatloaf With Baked Potatoes

A classic mix of meatloaf gets a cheesy upgrade. Throw in some potatoes and this is a dish that'll become your new favorite crock pot meal.

ingredients

1 1/2 pound ground beef or turkey
1/2 cup chopped onion
1 teaspoon minced garlic
1 teaspoon dry mustard
2 teaspoons chili powder
2 large eggs, beaten
1 cup dry bread crumbs (or combination of half bread crumbs and half wheat germ)
1 cup shredded cheddar cheese
6 small to medium potatoes, scrubbed and quartered
2 tablespoons olive oil or cooking oil

directions

Combine all ingredients, except potatoes and oil, by squeezing with your hands, mixing well. Shape into loaf and place in greased or Pam sprayed crock-pot.

Toss potato chunks with oil until well coated, arrange around meatloaf. Cover and cook on Low for 6 to 8 hours.
