MUCH TOO SOFT! This is not a meatloaf you can slice. Since I was using 1 1/2# ground beef... I made adjustments. For the meat I used, I put in 2 jumbo eggs and twice as much toasted bread crumbs. I didn't add more shredded cheese. Cooked the meatloaf for over 1 1/2 hours. Extra cooking time does not firm up the meatloaf. A DISASTER! As I write this...it is being fed to the garbage disposer. A real waste of good food.
CDKitchen Note: Not all recipes are easily scaled up/down so it may be that some of the ingredients shouldn't have been increased.
