Bacon Cheeseburger Meatloaf With French Fried Onion Topping

ingredients
1 pound ground beef
10 slices bacon, cooked and crumbled
1 package (8 ounce size) sharp Cheddar cheese, grated
2 large eggs, lightly beaten
1/4 cup bread crumbs, toasted
1/4 cup mayonnaise
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup ketchup
2 tablespoons prepared mustard
1 can (3 ounce size) French fried onions
directions
Preheat oven to 350 degrees F.
In a large bowl, combine the ground beef and next 8 ingredients, mixing well.
In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture.
Press meat mixture into a 9 by 5 by 3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining ketchup mixture over loaf. Bake 40 minutes.
Top with French fried onions; bake another 10 to 15 minutes, or until meat is no longer pink.

To the person who used 1 1/2 lbs of meat vs 1 lb, I used 1 1/2 pounds and didn't alter anything and the recipe turned out great. I'm guessing that adding more bread crumbs is why yours didn't turn out? It's a tasty meatloaf. The recipe doesn't specify how fatty the meat should be either so there is a chance one of us didn't use the same as the other which could be the difference. I used a mid-range (sorry, can't quite remember it was like 80-85%) fat content.
MUCH TOO SOFT! This is not a meatloaf you can slice. Since I was using 1 1/2# ground beef... I made adjustments. For the meat I used, I put in 2 jumbo eggs and twice as much toasted bread crumbs. I didn't add more shredded cheese. Cooked the meatloaf for over 1 1/2 hours. Extra cooking time does not firm up the meatloaf. A DISASTER! As I write this...it is being fed to the garbage disposer. A real waste of good food.
Not all recipes are easily scaled up/down so it may be that some of the ingredients shouldn't have been increased.
