A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.
Gourmet Stuffed Meat Loaf

ingredients
2 pounds lean ground beef
1/4 cup ketchup
1/2 teaspoon oregano
1 cup bread crumbs
1/4 cup milk
1 package (10 ounce size) frozen chopped broccoli, thawed
1/4 pound deli ham, sliced very thin
1/4 pound sharp Cheddar cheese, sliced thin
directions
Combine first 5 ingredients. Place a large piece of aluminum foil on the counter. Spread the meat loaf mixture onto the foil into a 16" x 10" rectangle.
Drain the thawed broccoli well. Then spread the broccoli onto the top of meat loaf mixture. Spread the sliced ham on the top of the broccoli. Arrange the cheese on top of the ham.
Using the aluminum foil as a help, roll the layered meat loaf jelly roll style. Pinch the edges. Place in baking pan. Bake at 350 degrees F for 1-1/2 hours.

Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

I omitted the ham and just used broccoli and cheese as the filling. It was delicious! Some of the cheese oozed out so try to seal it up really good as its better if it all stays inside.

A nice "gourmet" change to the standard meatloaf recipe. It was very good and the ham gave it an added sharpness to the flavor.
