ingredients
1/2 cup canned sliced mushrooms, drained
1 cup canned carrots, drained and chopped
1 cup canned green beans, drained and chopped
3 tablespoons dried bread crumbs
2 eggs or equivalent in egg substitute
16 ounces ground turkey or beef (90% lean)
1/2 cup chopped onion
1/2 cup rolled oats
1 tablespoon Worcestershire sauce
1/4 cup ketchup
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
directions
Preheat oven to 375 degrees F.
In a medium bowl, combine mushrooms, carrots, green beans, bread crumbs and 1 egg. Set aside.
In a large bowl, combine meat, onion, oats, remaining egg, Worcestershire sauce, catsup, pepper and garlic powder.
Spread half of meat mixture in the bottom of an ungreased 9" x 5" loaf pan. Cover with vegetable mixture, spreading evenly. Spread remaining meat mixture over vegetables.
Bake for 45 to 55 minutes. Cool for 10 minutes before serving.
