If you are always on the go, these nutritious and delicious breakfast cookies are a great breakfast option. Made with protein powder, they are a great way to start your day or power through a mid-day slump.
1/2 cup light olive or canola oil
1/2 cup sugar
1 egg
1 teaspoon vanilla extract
3/4 cup oatmeal, cooked (leftover is perfect)
3 tablespoons flaxseed
1/3 cup cocoa powder
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup protein powder (such as Spiru-tein Vanilla)
2 tablespoons milk
Preheat oven to 350 degrees F.
In large mixing bowl, mix together the oil and sugar until creamy, for about 1 minute. Add the egg and vanilla and mix another minute. Stir in cooked oatmeal and flaxseeds.
In separate bowl, stir together the cocoa, flour, baking powder, baking soda, salt, and protein powder. Add to liquid ingredients and mix together until incorporated. Add milk and mix for about 15 more seconds.
Drop by 2 tablespoonful scoops onto a lightly sprayed cookie sheet. Bake for 10 minutes. Remove and allow cookies to cool on sheet for about 1 minute.
