1/2 cup canola oil
1/2 cup unsweetened applesauce
1/2 cup brown sugar
1/4 cup egg substitute
1 tablespoon vanilla extract
1 tablespoon orange juice
1 tablespoon lemon juice
1/2 cup oat bran
1/2 cup 7-grain cereal
1/2 cup all-purpose flour
1/2 cup whole wheat pastry flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/2 teaspoon ground cloves
3 cups old fashioned oats
1 cup golden raisins
1/4 cup unsweetened coconut, optional
1/4 cup chopped walnuts, optional

directions

Preheat oven to 350 degrees F.

In a large mixing bowl, beat together with electric mixer, oil, applesauce, and brown sugar. Add egg substitute, vanilla, and juices, then beat again. Sift together oat bran, 7 grain cereal, flours, baking soda, salt, and spices. Mix these ingredients with the wet mixture. Stir in oats. Fold in raisins (and any other optional ingredients).

Place dough on ungreased cookie sheets by the tablespoonful. Bake 15 minutes or until golden. Remove cookies from the sheet immediately and let cool.

    These cookies are awesome. They're a hearty/nutritious morning snack with a good oat-y texture and just enough sweetness. I didn't have 7grain cereal so I doubled the Oat Bran. I used dried cherries and almonds instead of raisins and walnuts. YUM!

    These are great tasting cookies! I like the spices and used craisins instead of raisins. Do add the coconut, it really adds a nice background flavor. They seemed to crumble when placing on the cookie sheet but actually stay together very well. Yummy!

    This recipe was fantastic! I substituted craisins for the raisins, and sliced almonds for the walnuts. Everything else followed to a T. Very filling AND healthy!

    This are very good. Put 2 cookies together with vanilla frosting in between. They are delicious!
