1 cup uncooked rolled oats
2/3 cup nonfat dry milk powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 dash ground allspice
1/4 cup raisins
1 cup unsweetened applesauce
3 tablespoons sugar
1 teaspoon vanilla extract
3/4 teaspoon almond extract
Preheat oven to 350 degrees F. Grease an 8x8 baking pan.
In a large bowl, combine the oats, dry milk powder, baking powder, baking soda, cinnamon, nutmeg, and allspice. Mix well then stir in the raisins.
In another bowl, combine the applesauce, sugar, vanilla extract, and almond extract. Mix well then stir the applesauce mixture into the oat mixture. Just mix until the ingredients are moistened.
Transfer the batter to the greased baking pan. Place in the oven and bake at 350 degrees F for 30 minutes or until the top is lightly browned.
Remove the pan to a rack to cool then cut into bars. Store the bars in an airtight container.

these are very easy and quick to put together. I put the oats in the blender to make oat flour, and kept some out to give a little crunch. I also ground almonds, about 1/2 c. and added them. I have varied the fruit in this, putting real apple chunks in and tried a few dates with the raisins. Everyone loves these, they are a great breakfast-on-the-run!

These bars fall somewhere between a bar and a muffin, and are really satisfying. For extra almond-ness, I ran some almonds in the blender and added them to the recipe.

What a great recipe! Thanks for sharing. I was hoping for a crisp bar, but it is more chewy. They were a big hit in my house with a big thumbs up from my 8 year old. I hate the saying, but everyone does it... I loved the recipe but this is what I changed. Really it was only to double the recipe and use what I had in my pantry such as... Used a 9x13 pan and used 1/2c. cranberries, 2 whole dried pears diced,diced apricots, and used Splenda instead of sugar. The spice and flavorings were delicious and the ease at which everything came together was great. Made 12 substantial filling bars that I am currently testing how the remainder freeze. I wonder if adding an egg white or two would give me the crispness I would have wanted? Anyway, thanks for sharing a great recipe I know I will use again and again!
