ingredients

2 cups chopped, cored Red Delicious apples
1 cup sliced celery
2/3 cup halved seedless grapes
2 cups cubed or shredded cooked chicken breast
1/4 cup chopped pecans, toasted
1/2 cup fat-free mayonnaise
1/2 cup fat-free sour cream
3 teaspoons lemon juice
2 teaspoons Dijon mustard
1/3 cup sugar or sugar substitute
salt and pepper, to taste
red leaf lettuce
1/4 cup chopped pecans (optional)

directions

Combine apples, celery, grapes, chicken, and pecans in bowl.

Mix remaining ingredients, except salt, pepper, lettuce, and pecans; stir into apple mixture. Season to taste with salt and pepper.

Spoon salad onto lettuce-lined plates; sprinkle with pecans.

    I made this to serve on croissants at my son's birthday party (for the adults). The recipe is simple enough and doubled well. However it came out MUCH too sweet. I ended up having to add more sour cream, mayo, lemon juice, and salt to try and cut down on the sweetness. It was still a bit on the sweet side but I served it anyways (out of time for other options). The guests barely touched the sandwhiches so my guess it they thought it was too sweet as well. If I were to make this recipe again I'd use Granny smith apples instead of red delicious and I would omit the sugar entirely.

    I loved how I could change the serving size. I needed to make it for 25 people for a shower and that made it so easy recalculating all the amounts of the ingredients for me instead of guestimating. Plus, it was a delicious recipe! I put it on croissants with lettuce and tomato and they were very tasty sandwiches.
