McGillycuddy's Cashew Chicken Salad

ingredients
1/4 cup mayonnaise
2 tablespoons freshly squeezed lemon juice
1 1/2 tablespoon Worcestershire sauce
4 tablespoons Dijon mustard
4 cups poached chicken cubes
4 ribs celery, diced small
salt and pepper, to taste
1 cup salted cashew halves
alfalfa sprouts
combined shredded cheddar and Monterey jack cheeses
directions
Combine mayonnaise, lemon juice, Worcestershire and mustard. Mix with chicken and celery. Season with salt and pepper and mix well. Chill.
When ready to serve, mix in cashews.
Serve garnished with sprouts and mixed cheeses in croissant, a pita half, between slices of whole-wheat bread or on a kaiser bun. Can also be served on a bed of lettuce with fruit garnish plus additional sprouts and cashews.
