ingredients
1/2 cup margarine
2 1/2 cups instant rice
2 cups chopped celery and celery leaves
1/2 cup chopped onion
4 cups water
1 teaspoon poultry seasoning
1 teaspoon ground sage
1 tablespoon salt
1/8 teaspoon black pepper
1/4 teaspoon dried rosemary
1/4 teaspoon dried marjoram
1/4 teaspoon dried thyme
1 1/2 cup crushed gluten free corn flake cereal
directions
Melt the margarine in a saucepan over medium-high heat. Add the rice, celery, and onion. Cook, stirring frequently, until the rice is lightly browned.
Add the water, poultry seasoning, sage, salt, pepper, rosemary, marjoram, and thyme. Bring to a boil then cover the pan and remove from the heat. Let stand for 4 minutes.
Stir the cereal into the stuffing and let stand for 1 minute. Fluff with a fork. Let cool before stuffing the turkey.
8 cups of stuffing will stuff a 12 pound turkey.
recipe tips
Use homemade vegetable stock instead of water for deeper flavor.
Toast the corn flake cereal lightly in the oven for extra crunch and flavor before mixing it into the stuffing.
Try different herbs and spices to customize the flavor.
Add chopped nuts, such as pecans or walnuts, for added texture.
For an additional kick, add a pinch of cayenne pepper or a splash of hot sauce to the mixture for those who enjoy a bit of heat.
Make sure the turkey is not overstuffed, as the stuffing will expand a bit while cooking.
common recipe questions
What is gluten-free rice stuffing?
Gluten-free rice stuffing is a savory mixture used primarily as a filling for turkey or other poultry, made with instant rice, vegetables, seasonings, and gluten-free corn flake cereal, avoiding gluten as an ingredient.
Can I use regular rice instead of instant rice?
You can use regular rice, but you'll need to adjust the recipe as needed as the cooking time and liquid requirements will be different than for instant rice.
Can I substitute olive oil for margarine?
Olive oil (or butter) can be used instead of margarine for a healthier option, though it will alter the flavor slightly.
What vegetables can I add or substitute in this recipe?
You can add or substitute vegetables such as bell peppers, mushrooms, or carrots for additional flavor and texture. Just make sure they're chopped finely and sauteed with the celery and onion.
What is the purpose of using gluten-free corn flake cereal?
The gluten-free corn flake cereal adds crunch and texture to the stuffing while also helping to bind the ingredients together.
Can I prepare the stuffing ahead of time?
You can prepare the stuffing a day in advance. Just store it in an airtight container in the refrigerator until you're ready to use it.
How long should I let the stuffing cool before using it to stuff the turkey?
Let the stuffing cool for about 20-30 minutes or until it feels like room temperature when touched.
Can I bake the stuffing separately?
You can bake the stuffing in a greased baking dish at 350 degrees F for about 30-40 minutes until heated through and golden brown on top.
What can I use instead of poultry seasoning?
You can create your own seasoning blend using ingredients like dried thyme, parsley, and sage, or omit it altogether and simply rely on the other herbs.
How should leftovers be stored?
Store leftover stuffing in an airtight container in the refrigerator. It should be consumed within 3-4 days.
Can I freeze the gluten-free rice stuffing?
You can freeze the stuffing. Place it in an airtight, freezer-safe container, and it can last for up to 2-3 months in the freezer.
How can I reheat the stuffing?
Reheat in the oven at 350 degrees F until warmed through. You can also microwave it, covered, stirring occasionally until heated thoroughly. If it seems dry, you can add some water or broth.
tools needed
Saucepan: To melt the margarine and cook the rice, celery, and onion. The saucepan should be large enough to hold all the ingredients (including the cereal) and allow room to stir them well.
Measuring Cups and Spoons: For measuring ingredients such as the rice, water, and seasonings.
Wooden Spoon or Spatula: For stirring the rice, celery, and onion and other ingredients in the saucepan.
Fork: To fluff the stuffing at the end of the cooking process after mixing in the crushed corn flake cereal.
Lid: To cover the saucepan while the rice mixture stands after boiling, allowing it to absorb the liquid.
Cutting Board and Knife: For chopping the celery and onion before adding them to the saucepan.
what goes with it?
Herb-Roasted Chicken: Not just for turkey! Pair the rice stuffing with herb-roasted chicken for an everyday dish.
Braised Vegetables: Serve a side of braised root vegetables. Their natural sweetness can contrast nicely with the savory stuffing.
Gravy: Drizzle some homemade gravy over the rice stuffing. Just make sure it's made with a gluten-free thickening agent.
Stuffed Peppers: Use the rice stuffing as a filling for stuffed peppers.
Cranberry Sauce: A side of cranberry sauce can provide a tart brightness that cuts through the richness of the stuffing. It's a classic pairing, afterall!
Garlic Mashed Potatoes: Combine the stuffing with creamy, garlic mashed potatoes.
Mixed Green Salad: A fresh mixed green salad tossed with a light vinaigrette can provide a fresh contrast to the stuffing.

We now have two celiacs in our family so I'm always trying new gluten free recipes. We will be using this recipe again. It really is good. I made a small batch to go with a roasted chicken but the full size recipe will be perfect with a turkey for Thanksgiving.

I used this recipe for our Christmas dinner 2009 and everyone commented on how much they liked it. One guest took the recipe with her. I've used it with roast pork and it makes a great side dish. Thank you.

My wife has celiac so often we don't even stuff the turkey. But we had guests for dinner, so tried this recipe. It was so good that I received an email from the guests, requesting a copy of the recipe. And they're NOT celiac!
The reipe calls for combined spices. Does this mean like a 1/3 of a teaspoon each? And it calls for 1 tablespoon of salt is this correct? I have not eat it as yet, but have tasted before cooking with guessing the amounts, seems to be good. Thanks, Maine
: Combined spices? Where do you see that in this recipe?
