Mushroom Turkey And Swiss Cheese Pizza

ingredients
4 white mushrooms
2 teaspoons olive oil
1 small (6" round) pizza shell
3 slices turkey or ham (thin slices)
1 medium tomato, thinly sliced
coarsely ground black pepper to taste
2 teaspoons chopped fresh parsley or basil
3 slices Swiss cheese (thin slices)
directions
Preheat oven to 450 degrees F.
Wipe mushrooms clean, trim stems, and slice.
Heat oil in a small skillet. Add mushroom slices and cook over high heat for 2 minutes, shaking skillet. Reserve.
Cover pizza shell with turkey slices. Top with slices of mushrooms and tomato. Sprinkle with pepper to taste and 1 1/2 teaspoons parsley. Top with cheese.
Bake for 8-10 minutes or until cheese is golden and bubbly.
Garnish with remaining parsley. Serve immediately.

Instead of a single pizza, we made this on a full-sized pizza shell (like Boboli) and multiplied the ingredients times 4. We would have liked slightly thicker slices of turkey (maybe even cubed) but the slices of swiss melted great and covered the pizza evenly. Overall, this tasted like a hot turkey sandwich!
