Chicken Curry Pizza

ingredients
2 cups chicken curry
1 cup pineapple chunks
5 large mushrooms, sliced
1/3 cup onion, chopped or sliced
3 cups shredded mozzarella cheese
3 cups shredded cheddar cheese
1 large pizza dough
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon pizza seasoning
1 tablespoon ghee, optional
directions
Heat left over chicken curry until the meat is warm, or use freshly cooked curry. Take out just the meat chunks and place on paper towel. Take pineapple chunks out of can and place on paper towel. Chop into small pieces if chunks are too big. Wash mushrooms. Finely slice mushrooms and onion. Grate both cheese.
Rub ghee onto pizza pan. Place pizza dough on pan. You can use prepared pizza crust or make your own dough from scratch.
Spread mushrooms and half of onion onto pizza dough. Spread chicken chunks then sprinkle salt and pepper. Spread Mozzarella cheese, Cheddar cheese, pineapple chunks, rest of onions, and pizza seasoning. Place pizza into preheated 400 degrees F oven for 20 - 30 minutes, or until cheese is golden brown. Enjoy with chilled white wine.
