Oh man, have you ever tried pizza made with creamy boursin? It's a game changer. Chopped fresh herbs and a drizzle of olive oil compliment the creamy cheese and keep the pizza fresh and light.
1 pizza crust
1/4 cup dry white wine
1 tablespoon lemon juice
1 clove garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon black pepper
2 tablespoons olive oil, divided
1 pound boneless skinless chicken breast
1/2 cup chopped onion
3/4 cup crumbled light boursin cheese
1/2 cup chopped fresh basil
2 tablespoons chopped fresh chives
Combine the white wine, lemon juice, garlic, oregano, basil, black pepper, and half of the olive oil in a zip-top plastic bag. Add the chicken, seal the bag, and turn the bag to coat the chicken in the marinade. Place the bag in the refrigerator and let marinate for 2 hours or up to 8 hours.
Prepare the pizza crust if needed.
Preheat the oven to 450 degrees F.
Remove the chicken from the marinade. Cut the chicken into bite-sized cubes.
Grease a large skillet. Add the chicken and onion and cook over medium heat, stirring frequently, until the chicken is cooked through, about 5-7 minutes.
Brush the pizza dough with the remaining olive oil. Evenly sprinkle the chicken pieces over the crust. Top with the onion, Boursin cheese, basil, and chives.
Place the pizza in the oven and bake at 450 degrees F for 18-20 minutes or until the crust is browned and the cheese has melted.
Cut the boursin chicken pizza into wedges or squares and serve hot.

Hubs never wanted to try a pizza without red sauce YET he absolutely loved this! Try it this recipe and you'll be rewarded with a scrumptious meal. I used Paula Deen's pizza dough recipe and added spinach and mozzarella to the toppings. Sooo good! Another keeper and thank you :)
