ingredients
3 eggs, beaten
2 cups key lime yogurt
1 box (18.25 ounce size) yellow or white cake mix
3 drops green food coloring
1 teaspoon lime or lemon flavoring
1 lime, grated zest only
GLAZE
2 limes, juiced
2 cups powdered sugar
directions
Combine eggs and yogurt just until blended. Add dry cake mix and beat on low speed for about 1 minute or just until moistened. Beat on medium speed for 3 minutes. Add coloring, flavoring, and zest. Blend in gently.
Pour into a greased and floured or sprayed Bundt or tube pan. Bake at 350 degrees F until the top springs back when touched lightly with your fingertips, about 50 minutes. Cool 10 minutes in the pan. Remove to a rack to cool completely.
Glaze: Combine lime juice and sugar. Drizzle over cake while it is still slightly warm.
