This dense cake is perfect for any occasion. This cake is made with butter, sugar, eggs, and flour, and it has a rich flavor that everyone will love.

ingredients

3/4 cup butter, softened
1/2 teaspoon grated lemon peel
3/4 cup sugar
1 teaspoon vanilla extract
3 large eggs
1 1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt

directions

Preheat the oven to 350 degrees F. Grease the bottom only of a 9-inch loaf pan.

Combine the butter, lemon peel, and sugar in a mixing bowl. Beat on medium speed with an electric mixer for 1 minute.

Add the vanilla and eggs and beat on medium speed until fully incorporated and the mixture is uniform in color.

In a bowl, sift together the flour, baking powder, and salt. With the mixer running, slowly add the flour mixture to the egg mixture.

Pour the batter into the prepared loaf pan and place in the oven. Bake at 350 degrees F for 50 minutes.

Remove the pan from the oven and let the cake cool in the pan on a wire rack for 10 minutes. Remove the cake from the pan and let cool completely on a wire rack.

Store the pound cake in an airtight container.

    Magnificent and moist. I made the 12 serving size in a loaf pan for a higher cake. Added 1 diced apple and 3/4 cup of black walnuts that I harvested this Fall. Baked for just about 1 hour for the larger size. Yum, yum, yum

    I was looking for a pound cake recipe for a little loaf pan that I purchased, and I came across this one... WOW! Great recipe! This is perfect for when you don't need a huge cake, but want something homemade. The flavor was absolutely great. I did add 1/2 tsp. of lemon extract and 1/4 tsp. of real lemon juice and 1 TBS. of sour milk. A cook that I know uses the sour milk in her cakes, and she said it allows the cake to rise. She was right! This pound cake made my entire house smell like days of old - good and warm!

    I googled this recipe because I wanted to make a loaf pound cake. Went to walmart & bought the freshest ingredients. It was SO GOOD that my family and a visiting cousin ate half of it before I could get it to the reunion! So I'm making 2 more in the morning!! Any suggestions on how to make this rise higher?? The slice I buy at Starbucks is twice the height. How do they DO THAT??? EXCELLENT TASTE!!!!
