The lemon flavor in this cake really pops. Yellow cake mix with lemon pudding mix in the batter yields a delicious cake, topped with a sweet lemon glaze.

4 eggs
1 package (15-16 ounce size) yellow cake mix
1 package (3 ounce size) instant lemon pudding mix
3/4 cup water
1/2 cup oil
Glaze
1 cup powdered sugar
1/8 cup lemon juice
1 teaspoon grated lemon rind, plus more to garnish, if desired
Preheat the oven to 350 degrees F. Grease a tube or bundt pan.
Place the eggs in a mixing bowl. Beat on medium speed with an electric mixer until uniform in color.
With the mixer running, add the cake mix, pudding mix, water, and oil. Beat for 10 minutes
Pour the cake batter into the prepared cake pan. Place in the oven and bake at 350 degrees F for 50 minutes.
Remove the pan from the oven and let cool for 5 minutes then remove the cake to a platter.
In a bowl, combine the powdered sugar, lemon juice and lemon rind. Mix well.
While the cake is still hot, prick the top of the cake with a fork. Drizzle with the glaze. Sprinkle with grated lemon rind, if desired.
Store the cake in an airtight container.

I remade this as Key Lime Pudding Pound Cake with the following ingredients, and using the same instructions for mixing and baking: 1 package yellow cake mix 1 small package vanilla pudding mix (the type that you cook) 4 eggs 3/4 cup key lime juice 1/2 cup melted unsalted butter Glaze 1 cup powdered sugar 1/8 cup key lime juice grated lime rind (1 lime, approx. 1 TBSP) I'll be taking this to a New Years Day lunch tomorrow, so in the morning when it's cooled I'm going to dust it with a little powdered sugar and a sprinkling of edible white snowflakes.
