It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Pecan halves are coated in a mixture of sugar, salt, and cinnamon, then baked until crispy. Enjoy them as is, or use them to top salads, yogurt, or oatmeal.
1 cup sugar
1 teaspoon salt
1 teaspoon ground cinnamon
1 pound pecan halves
1 egg white, at room temperature
1 tablespoon water
Preheat oven to 300 degrees F. Line a rimmed baking sheet with foil.
Combine the sugar, salt, and cinnamon in a small bowl.
In another bowl, beat the egg white and water until frothy. Stir in the pecans and mix until completely coated in the egg white. Stir the sugar mixture into the pecans and mix well.
Spread the pecans out on the prepared baking sheet in a single layer. Place in the oven and bake for 30 minutes at 300 degrees F.
Remove the baking sheet from the oven and let cool. Break the pecans apart and store in an airtight container.

I reduced sugar by almost one half and increase pecans to 1.5 lbs (about 6 cups) Use 11 x 17 sheet pan lined with parchment and stir half way through. Makes a great gift at the holidays!

This is the easiest and most yummy way to do them! I like to add them to a crumbled bleu cheese salad!

These are fabulous - and so easy to make! I used whole pecan halves to decorate a sweet potato cheesecake. I made 1/4 recipe and I wish I'd made more - I made them yesterday and the leftovers are already gone!

Wonderful, easy snack. Thank goodness for Costco, they sell the huge bags of Pecans I went through 8 cups at last party and everyone always wants recipe
