Pizza night is always a favorite, especially when you have great tasting pizza from some of the most popular restaurants.

Use up leftover sweet potatoes in this delicious breakfast recipe. Mashed sweet potatoes are mixed with buttermilk, egg, pancake mix, sugar, and cinnamon and cooked in a waffle maker.
1 cup mashed cooked sweet potatoes
1 1/4 cup lowfat buttermilk
1 egg
1 tablespoon canola oil
2 cups lowfat pancake and baking mix
1/4 cup sugar
1/2 teaspoon cinnamon
confectioner's sugar (optional)
Preheat waffle iron according to manufacturer's directions.
In a medium bowl combine sweet potatoes, buttermilk, egg and oil. In a separate bowl, whisk baking mix, sugar and cinnamon. Stir sweet potato mixture into dry ingredients. The batter will be fairly thick.
Coat waffle iron with nonstick cooking spray. Spoon 1/2 to 3/4 cup batter into waffle iron; close and cook until crisp.
Sprinkle with confectioner's sugar, if desired.

I used to buy a gourmet sweet potato waffle mix from a little shop here but they went out of business and now I can't get anything as good. I used canned sweet potatoes in this because I didn't have the time to cook and mash fresh ones, but I imagine that could only make these delicious waffles even better. I didn't use lowfat pancake mix though, just regular.

Wonderful Flavor! Very filling. I always have too many sweet potatoes and buttermilk leftovers after Thanksgiving, this recipe was perfect for that issue. They freeze and reheat well for a homemade breakfast during a busy work week. Just zap them in the microwave before placing in a toaster due to heaviness and thickness.
