1 cup unsalted butter, softened
1 jar (7 ounce size) marshmallow cream
1 cup confectioners' sugar
1 teaspoon vanilla extract
Place the butter in a mixing bowl and beat on medium speed with an electric mixer until the butter is light and creamy. Add the marshmallow cream and continue to beat until the ingredients are combined.
Add the confectioners sugar and vanilla and beat on low speed to incorporate. Increase the mixer speed to medium-high and beat the frosting until it is light and fluffy, about 3-4 more minutes.

Outstanding!!! This recipe is so easy and there are so many ways you can change and alter it to fit what ever your mood is. I used this recipe for my smores cupcakes as well as my lemon cream cupcakes by simply adding lemon extract instead of vanilla and then thowing some candied lemon crumbles on top. Yummmmmmy! see photo's I attached

My 5 year old wanted to make a surprise cake for Daddy, and I needed a frosting recipe that was quick, easy, and nearly foolproof. Presto! Followed this one exactly, and it turned out great. Good consistency, nice flavor, easy to spread. No one would know it was a "cheat!" I'll use this one again, for sure.
