Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

ingredients
2 egg whites
1/4 teaspoon salt
1/4 cup white sugar
3/4 cup light corn syrup
1 1/4 teaspoon vanilla extract
1 drop food coloring
directions
Food coloring: first test with 1 drop of red food color to see if that's the color you want. Add more drops if a stronger color is desired. Red/Pink for Valentine's Day, Green for St. Patrick's Day, and so on.
Beat egg whites and salt with mixer until foamy. Gradually beat in white sugar until smooth and glossy. Beat in corn syrup, a little at a time until frosting holds firm peaks. Fold in vanilla and food color. Basic recipe makes enough frosting for 2-9" round cakes.

Keeping a can of frozen orange juice concentrate in the freezer means you can make more than just orange juice. Try it in a variety of orange-flavored recipes.
It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

This is the same as my mother-in-law's recipe that I have used for years. I frost my angel food cake with it for Easter. It is yummy!

This frosting was awesome. It was so light and pretty. I left it white and put it on devil's food cupcakes. It really complimented the cake. I will definitely use this recipe again!
