ingredients
1 3/4 cup flour
2 teaspoons baking powder
1 teaspoon baking soda
1/3 cup vegetable shortening
3 medium bananas, mashed
1 large egg
1/2 cup milk
1/4 teaspoon fresh lemon juice
1 1/2 cup flaked coconut, divided
directions
Preheat oven to 350 degrees F. Grease 13- x 9-inch baking pan.
Combine flour, baking powder and baking soda.
In a large bowl, beat the shortening and bananas until smooth. Beat in the egg, milk and lemon juice.
Gradually blend in the dry ingredients. Fold in 1 cup coconut. Spread mixture evenly in prepared pan. Sprinkle remaining coconut over the top.
Bake 15-20 minutes or until the top is lightly colored, and a toothpick inserted in center comes out clean. Cool in pan on a rack before cutting into bars.

I toast the coconut before using it and add about 1/3 cup sugar to the mashed bananas so these are a little sweeter.

The only problem with this cookie is I cannot stop eating them and usually one cookie will satisfy me. I cannot wait to bring with me to a birthday party tonight
Here is my revised recipe which brings the rating to a 4! Banana Coconut Bars Ingredients 1 3/4 cups all-purpose flour 2 teaspoons baking powder 1 teaspoon baking soda ½ t salt 1/3 cup vegetable shortening 3 medium bananas, mashed 1/3 to 3/4 c white or brown sugar, depending on sweetness of coconut 1 large egg 1/2 cup milk 1/4 teaspoon lemon juice 1 1/2 cups flaked coconut, divided Yellow food coloring (optional) Steps 1.Preheat the oven to 350 degrees. Grease or spray a 13 x 9 inch baking pan. 2.Combine the flour, baking powder, baking soda and salt. 3.In a large bowl, mash the bananas then, using the masher, beat with the shortening and sugar until smooth. 4. With a wooden spoon, beat in the egg, milk, and lemon juice. 5.Blend in the dry ingredients. Fold in one cup of the coconut. 6.Spread the mixture evenly into the pan. 7.Measure the remaining 1/2 cup of coconut and a few drops of optional food coloring into a jar or zipper lock bag. Shake until well blended and sprinkle over the top of the batter. 8.Bake for about 20 minutes, or until the top is lightly colored. 9.Let cool for about an hour. Cut into small bars and enjoy! Warning: Do not freeze these bars. The banana part turns out frozen and ruins your bars!
