It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).


6 tablespoons butter, melted
4 cups vanilla wafer cookie crumbs
3/4 cup green candied cherries, chopped
3/4 cup red candied cherries, chopped
1/2 cup candied pineapple, chopped
1/2 cup dates, chopped
14 ounces sweetened condensed milk
1/4 cup bourbon, or water
Pour melted butter into a 15x10-inch baking pan. Sprinkle vanilla wafer cookie crumbs evenly in pan over the butter. Arrange candied fruits evenly on top of the crumb mixture; patting down gently.
Combine condensed milk and bourbon in small bowl until well mixed. Pour evenly over top of candied fruits. Bake at 350 degrees F for 20 to 25 minutes. Remove from oven and let cool completely.
