These sweet-tart cranberry squares are an excellent choice if you want a dessert that's both easy to make and appealing in taste.

serves/makes:

ready in:
  1-2 hrs

ingredients

1 1/2 cup all-purpose flour
1 1/2 cup sugar
1 cup melted butter, cooled
2 eggs, well beaten
1 cup chopped nuts
2 cups fresh whole cranberries

directions

Preheat the oven to 325 degrees F. Grease and flour a 9x13-inch baking dish.

Combine the flour, sugar, butter, and eggs in a mixing bowl. Beat on medium speed with an electric mixer until combined, about 2 minutes.

Stir the nuts and cranberries into the batter by hand, mixing just enough to incorporate.

Transfer the cranberry squares batter to the prepared baking dish. Place the baking dish in the oven and bake at 325 degrees F for 45-50 minutes or until light golden brown.

Remove the baking dish from the oven and let cool in the pan on a wire rack. When cool, cut into squares.

Store the cranberry squares in an airtight container.

recipe tips

For a festive twist, add a teaspoon of orange zest or a sprinkle of cinnamon to the batter.

Let the squares cool completely in the pan before cutting them. This helps them set and makes them easier to cut cleanly.

If you prefer a crunchier top, sprinkle a little extra sugar over the batter before baking.

To make the squares more decadent, drizzle them with a simple glaze made from powdered sugar and milk or lemon juice after they have cooled.

For a nut-free version, omit the nuts and consider adding extra cranberries or another fruit.

Greasing and flouring the pan is important to make sure the squares don't stick. You can also line the pan with parchment paper for easy removal.

common recipe questions

What type of nuts work best in this recipe?

Walnuts or pecans are commonly used and pair well with cranberries due to their rich, earthy flavor. However, almonds or hazelnuts can also be used for a different taste.

Can frozen cranberries be used instead of fresh?

Yes, frozen cranberries can be used without thawing. They may slightly increase the baking time, so keep an eye on the squares as they bake.

How can you tell when the cranberry squares are done?

The squares are done when they turn light golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs. Avoid overbaking, as this can dry them out.

Can other fruits be added to this recipe?

You can add chopped apples, pears, or even raisins for a different flavor. Adjust the quantity of cranberries accordingly to maintain the balance of the batter.

How should the cranberry squares be stored?

Store them in an airtight container at room temperature for up to 5 days or refrigerate for longer storage. They can also be frozen for up to a month.
