A simple slow cooker dinner made with boneless chicken breasts, pre-made Alfredo sauce, garlic, and mushrooms and served over cooked fettuccine.
4 boneless, skinless chicken breast halves
1 jar (16 ounce size) Alfredo sauce
2 cloves garlic, crushed, more if desired
1 can (4 ounce size) sliced mushrooms, drained
8 ounces fettucine pasta
grated Parmesan cheese
Place the chicken in the bottom of the crock pot.
Combine the Alfredo sauce, garlic, and mushrooms. Spread evenly over the chicken making sure to completely cover it.
Cover crock pot and cook on low for 6-8 hours.
Shortly before chicken is ready, bring a large pot of water to a boil. Cook the fettucine until al dente. Drain.
Place some fettucine on each individual dinner plate. Top with a chicken breast and some of the sauce. Sprinkle with parmesan cheese. Season with salt and pepper if desired.

Nice way to dress up a jar of alfredo sauce. Super easy. I chop the chicken up and reduce the cooking time to 4 hours and serve over rice.

As usual I changed things up a bit with this recipe. I used cooked chicken breast that I sliced on the diagonal (had leftover and was making this for two people only). I sauteed fresh mushrooms and the garlic in olive oil and then combined that with the alfredo sauce and chicken. I only cooked it for 3 hours on low because the chicken was already cooked. I also added the cooked pasta to the crock pot about 15 minutes before it was done - long enough for it to absorb some of the sauce). I stirred a little of the parmesan into the sauce just before serving (long enough to let it melt a bit) and then topped it with more at the table. Twas good comfort food!

This was good but lacked a little flavor. The Alfredo sauce made it a little bland so maybe I needed a different brand or something. Will try it again because the chicken was very tender. I also think fresh mushrooms would be better.

I cut up the chicken into bitesized pieces before adding it to the crock pot. This did cut down on the cooking time a little. I also used fresh mushrooms that I sauteed in a little butter before adding to the crock pot.
