Pizza Soup With Sausage, Pepperoni, And Mushrooms

1/2 pound cooked Italian sausage, mild or hot your choice
3 tablespoons olive oil
8 ounces sliced fresh baby bella mushrooms or button mushrooms
1 jar (4 ounce size) roasted red peppers, chopped
1 medium onion, diced small
4 ounces pepperoni, diced
1 medium green bell pepper, diced small
1/4 cup diced deli ham
4 ounces black olives sliced (optional)
1 jar (32 ounce size) your favorite chunky spaghetti sauce
1/2 teaspoon garlic powder
2 ounces julienned sun-dried tomatoes
1 medium tomato, diced
1/2 cup chopped fresh basil
1 cup chicken stock
1/2 cup red wine (optional)
1/2 cup chopped fresh spinach (optional)
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese, for garnish, do not add to the soup
additional pizza toppings as desired

In a large sauce pan over medium heat add the onions and saute for 3-5 minutes until they start to brown.
Add the sliced mushrooms and pepperoni and saute an additional 3-5 minutes until they brown. Add fresh diced tomato and cook for 3 minutes.
Add chicken stock and stir to get all the brown goodness off the bottom of the pan.
Add the rest of the ingredients EXCEPT the mozzarella cheese (this is for garnish).
Turn the heat down to simmer and cook for 15 minutes or until the parmesan cheese is melted and the soup is warmed through.
Serve with hot chewy breadsticks and grated mozzarella cheese
I had this at my favorite restaurant, I was able to recreate it at home. To get the whole effect of pizza, serve with chewy bread sticks!
