This chicken and cheese casserole with broccoli calls for just a few ingredients, like mayo, cream of mushroom soup, and a crunchy Ritz cracker crust. It's a simple dinner winner.
2 packages (10 ounce size) frozen broccoli
3 cups chopped, cooked chicken
2 eggs, lightly beaten
1/2 cup shredded cheese (your choice)
1 can (10.75 ounce size) cream of mushroom soup
1/2 cup mayonnaise
1 small onion, chopped into small pieces
4 tablespoons butter, melted
32 Ritz crackers, crumbled
Preheat the oven to 400 degrees F. Lightly grease a 2-quart baking dish.
Cook the broccoli as directed on the package. Drain well.
In a large bowl, gently stir together the cooked broccoli, chopped chicken, eggs, cheese, cream of mushroom soup, mayo, and onion. Mix completely then spoon the mixture into the prepared baking dish.
In a small bowl, stir together the melted butter and cracker crumbs until the crumbs are covered in the butter. Evenly spread the crumb mixture over the top of the baking dish.
Place the baking dish in the oven and bake at 400 degrees F for 15-20 minutes or until bubbly in the center. Serve hot.

I doubled the recipe in order to feed 3 adults & 4 kiddoes (all under the age of 8). This dish was very tasty, & was enjoyed by all. I used Heart Healthy Cr. of Mushroom Soup, & also added in a small jar of mushrooms (we love 'em). GREAT dish, & we'll be having it again. Thanks. :-)

SO good! I liked the suggestion by someone else to use cream of broccoli soup so that's what I did (cream of chicken would be good too since the recpie has chicken)

This meal was easy and Delicious!! We are not crazy about mushrooms sooo I used cream of broccoli instead. I will absolutely make this again!!!!

I made this with a little adjustment because I only had 2 chicken breasts and 1 bag of frozen broccoli. I added celery and mushrooms uncooked before putting in the oven. For the cheese I combined colby, mozz, and parm and used breadcrumbs instead of cubes. This is possibly the tasties dish I have ever made!!

Really easy & very tasty! My husband thought it was beautiful and my 1&3 year olds munched it all up! Was very happy with result.
i was in a hurry & used this recipe but after prep, noticed there's no temperature info. anyway, i baked at around 375F for 25minutes, working backwards that the recipe is less than 30mins as noted, & it took abt 5min to cook the broccoli. however, i modified the ingredient, adding shell pasta, hence add another portion on cream of chicken (I ran out of cream of mushroom!). I also topped it with bacon bits. Lucky for me, it turned out very nicely. Believe it or not, it is my 1st time baking a broccoli & cheese casserole For me, I just need the basic ingredient info & after that, just modify at my whim :-)
This recipe is not good - besides missing what temperature it needs to be cooked, it has to be missing something else as well. Don't make it, I followed it to a tee and it was not good.
Agreed that the directions seem to leave out how to bake it. However, just saying something is "not good" doesn't help anyone improve it. How was it not good? Too cheesy? Not cheesy enough? Need more/less broccoli?

I used fresh steamed broccoli instead of frozen. This casserole was terrific - not a typical "Cambells Soup" type recipe. Will make again!!

This is a great dish my husband loved it. I will be cooking this one again, very quick and easy to make.
doesnt complete recipe. tells how much time, but not what degree to put in on.
This recipe isn't complete. Do you bake it after you put the broccoli mixture into the pan??? If so, at what temperture and for how long?
