Chicken Breast & Broccoli with Madeira Sauce

ingredients
9 ounces broccoli florets, thawed
4 chicken breast halves without skin, boned
2 teaspoons lemon juice
1/4 cup flour
2 tablespoons margarine
SAUCE
2/3 cup chicken broth
2/3 cup Madeira wine
2 cups whipping cream
1 teaspoon lemon juice
1 tablespoon Parmesan cheese
directions
Sprinkle chicken with lemon juice. Coat with flour. Melt butter. Saute chicken 5 to 6 minutes each side. Using large pan, combine broth and wine.
Bring to running boil. Boil over medium heat about 6 minutes or until liquid is reduced to 2/3 cup. Add cream. Continue to boil until sauce is reduced to 1 3/4 cup about 8 to 10 minutes. Stir in lemon juice.
Heat oven to 375 degrees F. In 9 x 13-inch pan, arrange broccoli. Place chicken breasts on top. Pour sauce over. Sprinkle with Parmesan cheese. Bake at 375 degrees for 15 to 20 minutes or until bubbly.

The recipe was originally marked with a difficulty level of "2" which indicates a lower than average cooking ability was needed to prepare this recipe. After preparation, we decided it should be a "3" since the sauce reduction takes at least an average skill level. It also called for only 9 ounces of broccoli which we felt was far too little for the amount of chicken. We doubled the amount of broccoli to make this a nearly one dish meal. If you served it with a heavy side dish you may not need extra broccoli, but we felt it was healthier than something starchy on the side. The recipe also did not call for any salt/pepper or seasonings. If you are using regular chicken broth (as opposed to low sodium) you may not need to add salt, but might want to add some pepper. Or else, let individuals season to taste at the table. If you don't have Madeira wine on hand, you can substitute dry sherry, or just use all chicken broth (use good quality for optimal flavor). The chicken was very moist and the sauce tasted very good with both the chicken and the broccoli.
