1 1/4 cup uncooked converted rice
1 tablespoon chopped fresh parsley
1/8 teaspoon black pepper, or to taste
2 pounds chicken tenders or boneless breasts cut in strips
1 envelope cream of broccoli soup mix
1 1/2 cup chicken broth

directions

Grease the inside of the crock pot. Add the uncooked rice, parsley, and black pepper. Place the chicken on top of the rice.

In a bowl, combine the broccoli soup mix and broth. Slowly pour over the chicken and rice.

Cover the crock pot and cook on low heat for 5 hours or until the chicken is cooked and the rice is tender. Stir gently before serving.

    I couldn't get brocoli soup mix so I used some frozen chopped broccoli and cream of chicken soup thinned with a little broth. I cooked on low for 6 hours and it wasn't overdone but the rice did get a little mushy. Maybe stirring cooked rice in at the end is a better way to cook it.

    I agree with the first 2 reviews, do not cook for over 5 hours or it will come out overdone. To me it needed extra flavor so I added some seasoning salt other than that it was very quick and easy for a busy day

    I followed the directions but after 2 hours I found that all the liquid was already gone and the edges of the chicken were starting to dry up (the chicken was almost completely cooked throughout), the rice was drying up and starting to burning. I had my crockpot set on low. I added the rest of the 32oz chicken broth that I had which then completely covered over the chicken and rice. I let it cook for another 2 hours and it came out perfect. My husband, who never likes to try anything new, said he loved it. I would recommend adding a full 32oz box of broth when making this recipe. PS if you are looking for the dry broccoli soup mix, Knorr makes it and it is usually on the grocery isle with the dry dip/salad dressing mixes.

    First, I had trouble getting cream of broccoli soup mix at supermarket. I used canned cream of broccoli soup. Second, we cooked it for 7 hours and it was overcooked and somewhat dried out, but our venerable crockpot may be to blame. Nonetheless, it was tasty and I will try again. Also had trouble finding converted rice so I used enriched white rice; converted should work better.
